Novoandean Workshop

For the purpose of promoting the consumption of Andean foods and disseminating their nutritional value, CIP Food and Lodging Services organizes courses and workshops called Novoandean Cooking, Gastronomy of the Future, in different parts of the country. In accordance with the objectives of CIP, the preparation of delicious recipes with Andean ingredients little known outside of the areas where they are produced are taught, their nutritional and medicinal value, the possibilities for industrialization and the economic benefit that these products can bring to those who are engaged in their diffusion.

The First Arracacha Festival, organized by the Project for Enhancing the Competitiveness of Arracacha was held in Sócota, Cutervo province. The Municipality of Sócota, the culinary and hotel management schools in Cutervo, the NGO ESCAES and specialists from CIP Food and Lodging Services participated. It was sponsored by the International Development Research Center (IDRC) of Canada.

Event was organized by the Regional Government of Huaraz and sponsored by the International Development Research Center (IDRC) of Canada through the Participatory Investigation Project. The Chef School of the Santiago Antunez de Mayolo University in Huaraz, the Project for Enhancing the Competitiveness of Arracacha, and specialists from CIP Food and Lodging Services participated. Excellent results were achieved in the promotion of Andean products and local security.

This event was held on October 15, 2002 and included cooking and bartending classes, Andean food sculpting and the conditions required for achieving excellence in food services. It was sponsored by the Junin Agrarian Region of the Ministry of Agriculture. Chefs and personnel from the leading hotels and restaurants in Huancayo participated.

Event held on August 28 and 29, 2002 at CIP headquarters. It was attended by food and beverage executives, chefs from the main hotel chains in the capital and students from prestigious high cuisine schools, which demonstrates the interest that Novoandean cooking is generating among sectors that serve international tourists.
