Sweetpotatoes originated somewhere between Central America and South America and were cultivated by the Incas even before the year 1000 BC.
When Spanish explorers first arrived in South America in search of gold, jewels and spices, they didn’t expect to find a treasure trove of vegetables that would become some of the world’s most important crops: corn, the Irish potato and the sweetpotato.
