Many only know floury or bacony, others perhaps even individual varieties such as Ditta, Sieglinde or Bintje. But who would have thought that there are over 4,800 varieties of potatoes? But because global warming is no exception for potatoes, this diversity is threatened and the global yield could fall by around a third by 2060 – with a further growing population – according to the Centro Internacional de la Papa (International Potato Center CIP) in Lima.
